Did you survive Christmas?

Christmas and New Year is all about food, right? There is so much temptations in many forms of sugar. At work there was gifts and it was just candy, candy, cookies and some more cookies. I am so happy that I don't have to buy those things or eat them. I get provoced a lot from people at work who tries to offer me cookies and candy and last week I just got enough and decided that next time someone who knows that I don't eat sugar tries to offer me that I will grab my part and throw it in the garbage. It is my part so I can do what ever I want to do with it, right?
I have been blogging a lot at my swedish blog about malnutrition for gastric bypass-operated. I have been translating from english to swedish because a lot of the swedes don't understand medical engligsh and barley in swedish.

This is really bad and I wish that this horrible way of trying to loose weight will be forbidden all over the world. 

Low carb High Fat-food is a very good alternative and there is so much nice recepies all over Internet!
I don't really have to write about that food because the only thing you can do is to google. 
That is the easy part!

The hard part is to stay to that food and resist the temptations. 

But get tempted from good food for you! 
This is what I made yesterday for new years eve:

Organic chicken with thyme, garlic, onion, carrots, lemon, pepper and salt. I made "pulled chicken" in my roman pot for 150 Celisus for five hours. 
To this I reduced the juice from the chicken and made cauliflower-rice. 

This was a nice dinner I want to tempt you with!

I am feeling fine, working on my weight, health and started my strict low-carb high fat period again, though I been a little bit to lazy and had to much carbs latley.
Started two weeks ago and already lost 5 kilos. I love it!

Fast beef stew with brussels sprouts and asparagus

Energy is not always on top when you get home from work. You want food fast, even as the LCHF: ers. Slow food get cook weekends.
Today I made:

6 slices thin sliced pork
A bag of frozen Brussels sprouts about 500 grams
A bunch of fresh asparagus
2 deciliter of creme fraiche
a cube of stock - organic
Black pepper, white pepper, herb seasoning, himalayan salt
butter

Bring out the frying pan. Shred the meat rough, about 4 centimeters thick.
Take a pot and boil  the sprouts al dente. Rinse and snip off the woody bit of the asparagus and cut into 4 cm long pieces and add to the end of the cooking time of the sprouts, about 3-5 minutes at the end. Drain.
Fry the meat with salt and spices. When the meat is nicely fried, pour over sprouts and asparagus and saute them together with the meat.
Pour the sour cream and stock cube and mix.
Let simmer until the broth, sour cream and the other ingredients feels ready. About 10 minutes.


Fried cod with horseradish mayonnaise

Got the idea of ​​horseradish mayonnaise from a promotional film on TV about Sushi where the 'chef' mix mayonnaise with wasabi. I realized that the combination has to be perfect for regular fish too. I do not eat Sushi at all because I totally hate raw fish, but cooked fish I love.
The ingredients are ridiculously simple:

1 cup mayonnaise
1-2 tsp grated horseradish
a few drops of lemon juice
a little salt
1 Tbsp chopped dill
Mix together!

This was actually just enough for me, if you need more then double the recipe.
Do not be afraid that the horseradish mayonnaise is strong, along with fish and vegetables it wont be that strong if you don't not like it. Horseradish may have differnt strenght so dare to taste how much you like.
Added to this was served two pieces of fine back filet cod which I fried in plenty of butter, white pepper and salt. I poured the butter over the fish while I fried it.
Was served with a salad of fresh organic spinach, half a avakado, organic small plum tomatoes and cucumber.
Really good and very easy!


Pancake in the oven

Swedes are crazy for pancakes and I think that every swede makes pancakes at least on day every week and we don't eat them like americans - we eat them as dinner.
It is supposed to be a dessert after a nice soup, made of yellew peas with salted pork and mustard on thursdays! :)
Well, I can confess that I eat that soup sometimes even if it is not really low carb high fat-food.
But those pancakes is more difficult. There is a lot of recepies for them, some are good and some are less good.
 Sometimes I cook the "regular" lowcarb pancakes but this friday I was not feeling so good, had a headache and a bit of mild nausea so I googled "ugnspannka" and I did NOT wanted to have pork -pancake which seems to be the most common in Sweden. I never liked that.

After some searching, I found the following recipe from HannaKJonssons blog.
Four eggs
Three cups heavy cream
Two tablespoons Fiberhusk - Physsilum seed-flour
80 grams grated cheese
salt

Beat eggs and cream, mix in the shredded cheese and then Physsilium seedflour. Let it rest and swell for half an hour.
Pour into a buttered dish, not a roasting pan! (about 20 x 25 cm)
Put into the oven for about 20 minutes at 200 degrees Celisus.
I let it stand inside until it got nice color.



To this eminent batter pudding I served a "mix" of cherry-sauce.
1-2 cup frozen cherries or fresch if you have it! 
0.5 cups whipping cream 
1 cup full fat yoghurt
1 tsp vanilla powder (organic)
some sweetening - choose the one who NOT raise your blood sugar as Stevia

I boiled the cherries with sweetener. Let them cool and put in the vanilla powder.
Mix the cherries gently and then  mix in  the cream and yoghurt. 

Dangerously good! One can choose any berries you want or just vanilla powder.

My summer

As you noticed, I haven't been active on my blog for the whole summer. The main reason is that my summer started with a big loss in my family. My father died the 15th of june. He was sick in leukemia since some years ago, not the "dangerous" version but as he didn't like his life anymore, living with a chizofrenic woman who refused to get help, it slowly made him depressed and lost his energy to live. He came to the hospital at monday and died on saturday with me, my brother, two of my kids and my brothers daughter and girlfriend and our fathers wife at his side. I had my hands on him when he left this life. He was just 77 years old and I think I still have a hard time to accept that he is dead.
After his death hell broke loose. The crazy wife is not alloving us to take care of dads things in the house etc. A lot of screaming and conflicts has started since that day. I really hate her! All important papers and things are suddenly "lost" - so we can't even find his last will. Just crazy life here.
Beside this wich is very personal and private the summer has been awsome.
We had a nice, warm, sunny summer. I spent a lot of time with my brother because he had to come down to me because of our fathers death. We became closer because of this wich is very nice.
My daughter has also moved back to me. She is divorced now and no, it is not sad - it is also good!
We had many nice days together with good food and laughters - not just tears.
I lost about five kilos this summer, just by skipping carbs a week now and then. I also tried the new thing - fasting two days in a week, eating maximum 500 calories. I tried it for two weeks but the fourth day I fell totally. I was so hungry and had to make dinner for my son...and couldn't help my self to eat from the food.
I think this fasting is not for me because of my gastric bypass. I don't eat enough anyway so skipping food for 2 days a week might not be a good thing for me. I lost 3 kilos doing it anyway!
I am getting slowly getting closer to my goal - 72 kilos but this last week I have been thinking about stopping to try loose more weight. The reason is that I am just feel so good right now and getting very bony and at the same time I have a lot of excess skin and I have no idea how much it weighs. I am even wrinkly at my bum!

It is not just food who is a very important thing to think about - also what we put ON the skin and found a very good article about it.

Sesame crackers

I have tried numerus of different recepies of lowcarb-highfat-bread. But there is just one soft bread-recepie I like. 
I missed that crunchy feeling you get when you eat cracker bread, a very swedish thing. 
Now I finally found a good recepie, thanks to my daughters neighbour! 


Recepie: 400 grams sesame seeds
5 big eggs
3-5 deciliters shredded cheese
1 dl ecological cold pressed oil
salt and if you like some green herb,  I used some Thyme.
Wisk the eggs, stir in the rest of the ingredients and spread it out on TWO owen plates.
Put them in the own at 185 degrees C.  for 20 minutes.
Take them out and cut thrm in pieces. I used my pizza slicer.
Turn them and put them back and turn of the heat and let them dry in the owen so they get crispy

Enjoy! 
Don't put the crackers in a plastic bag because then they get soft again. 
I had my first piece with mayonnaise, salami and brie!

Zero carbohydrates

If you live on low carb high fat-food and you loose weight, all is good. But if you realize that nothing happens with the weight after a copple of months, you might need to change some levels of food.
LCHF means that all carbs comes from vegetables and dairies, mostly from cream and cheese.
As a woman and been dieting since you can remember, are older (40+) this is typical to get in to a plateau. Week after week, and even month after month and the weight is the same. You feel good but you want to loose that weight!
The key is: loose the dairies! Look over what type of greens you eat too!

There is a way also to go zero carbs, wich we call fakir in Sweden:
That means you only eat fat and proteins, that's it!
I tried to "fakir" in october last year and that resulted in loosing 9 kilos between october and december. I stopped at christmas.
 BUT! Those first weeks was HARD! I experienced to feel really sick = ketosis flue. You feel sooo tired, so drained, the stomach explodes and you are afraid to be more then three meters from the toilett, but after that first period of conversion, you start to feel awsome! Lot's of energy and just love the feeling!
I was so happy to get under 100 kg for the first time in my adult life!
Well...how about trying to loose some more?
I was kind afraid to try this, now when I work. How will I feel? Will I get that upset stomach and tiredness?
I started on monday and nothing "bad" happend. The third day, Wednesday, I felt any conversion-problem: Tired and thought I would get the flue but the next day I felt fine again. And I lost 3 kilos this week!
That means 5 kilos to 90. I am going for that!
Theese morning, when I woke up, I had so much energy that I went down to the gym and tried the cross fit-machin! I worked on it for 12 minutes with a pulse of 140. Also tried to work my shoulders on two other machines...FIRST TIME EVER!
I feel great and proud of myself!
What did I eat this week?

Monday: Started to make eggmilk: 4 eggs, two tablespoons of coconut oil, 4 tablespoons Ghee (butteroil) wich you mix with 4 deciliters of boiling water. (Watch out so you don't get burned)
Breakfast: Coffee with eggmilk.
Lunch: 2 eggs with 1.5 tablespoons butter (Wich I make in the micro at work)
Dinner: Two fried eggs, mackerel in tomato sauce (I fiddle the mackerel out of the tomato sauce), mayonnaise. Some slices of creamy cheese.
Coffee with egg milk  during the day breaks.
Tuesday: Same as Monday but started with egg coffee instead of coffee with eggmilk, then I add one egg, 1 table spoon coconutoil and 2 table spon of Ghee.
Wednesday: Breakfast Same as above
Lunch: Same as always: Two eggs with butter in the micro.
Dinner: Same as Monday and Tuesday.
Thursday: Same breakfast and lunch
Dinner:  Butterfried Entrecote with champignons and bearnaise sauce.
Friday: Same breakfast and lunch
Dinner: Pan fried cod with butter and butter-boiled spinach leaves, about 1 cup. (0.6 kh/100g)
Saturday: Coffee with eggmilk.
Lunch: Two fried eggs with a little creamy cheese on top - after my little exercise.
Dinner: Hamburgers made by myself with fried mushrooms and onions (6 kh/100 g of onion). I will eat around  half an onion.
I am not 100% consistent with zero carbs as you can see, because I want to have something TO my meat/fish or chicken.

I choose those greens wich is the lovest amount of carbs and I eat maximum 100 grams of it.
That what happens if you try to zero your carbs, or almost - maxium energy and maximum weightloss!

Pancakes


Pancakes is a very popular dish in Sweden. Mostly made of eggs, milk and flour, sprinkled with sugar on the top and strawberry jam. Some like it with ice-cream...well, that is a big no no for me, eating LCHF. 
But there is a way to enjoy that type of dish anyway.

Ingredients:
2 eggs
1 teaspoon salt
3 dl cream
1 cup Philadelphia cheese
Sprinkle some stevia/ or any other GOOD sweetner
1 tbsp coconut flour
1 tbsp husk

Beat the eggs hard with salt and sweetening. Stir in cream and Philadelphia cheese and whisk until it is blended nicely.
Mix coconut flour and husk and whisk into the mixture.
Spoon down like small  pancakes in the pan - please use coconut oil because butter burns the  pancakes quickly and have not to high heat on. It will be eight small pancakes on this amount of pancake batter.

Topping:
One part cream and and the same amount of Philadelphia cheese, whisked together. Season with a bit of vanilla powder and stevia or other good sweetner.  Mix in some kind of berry. I had blueberries and raspberries.

The taste was very good indeed! Oliver, my son ate up two of these and his spontaneous comment was:
 - It tastes like the pancakes!
Doh! : D




The best pizza so far



Now I have tried lots ofdifferent pizza bases with different results and taste, and now I have a winner!


I started from a Ciabatta recipe that I found online a while ago. It's probably the closest "bread" I can think of as a LCHF: er.
Today I tried to bake it as a pizza base with a little modification.
First and foremost, it would fill  my roasting pan so I did double everything.
Ingredients:
8 eggs
200 grams Philadelphia cheese
200 grams of cottage cheese (fill the empty Philadelphia box and  you have the same amount)

200 gram melted butter


3 cups almond flour
1 cup coconut flour
4 tablespoons physillium husk (you can use 4 tablespoons of coconutflour instead if you can't find it in the stores)
3 teaspoons baking powder
2 tsp salt
2 tablespoons oregano (dried)



Take out two bowls and mix the wet ingredients well with a whisk. Mix together the dry ingredients in a separate bowl and then pour the mixture into the dry and mix with a wooden fork.
Pour it in a roasting pan, preferably with a baking paper. Do this as fast ad you can, the better it is possible to "spread out" the batter at the plate. If you wait the batter swells and it becomes more difficult to smudge because of the husk.



Bake the base for a maximum of 30 minutes and take it out.
Meanwhile, prepare what you want on your pizza.
Today we did a taco-inspired pizza and I made a spice mix that I was inspired by the last weekend when I made Indian cuisine.



I dry roasted 3 tsp of cumin seeds, and put them together with 4 small garlic cloves, some chiliflakes, about 2 tsp coriander seeds, a little chipolte pepper (smoked chilli), salt, oregano and some garlic powder in a mortar.  I mixed the spices with minced meat which I fried with butter.
I had a tomato sauce that I made before.
Grate the cheese, about 4 ounces - I had three pieces of cheese with different tastes. Likes to mix different cheeses.
Spread the tomato sauce on the pizza base, then add the cheese.
Then the minced meat.
Slice olives, fresh spring onions and tomatoes in the oven at 200 degrees until the cheese has melted.


Really good! If you like a thin pizza base so you can scrape off a bit of pizza batter and bake it as small buns or what you like. Do not be afraid to try!

Christmas in Sweden

This blog has almost fallen in to the winter-sleep but the reason is that I finally got a job, after 15 months of being without.
I am sooo happy for my new job and loves it but at the same time I am very tired because of that long time, I have been home. I could spend hours on my blogs, both this one and my swedish blog and now I don´t have that much time. Christmas is close and most of my friends are so busy, buying christmas-stuff, making food and baking cakes. All Christmas in Sweden is about food and christmasgifts and this is one of the hardes holidays of the whole year, when you are a sugaraddict - where ever you are or look there is lots of triggers for sugaraddiction.
We all have "soft spots" what is triggering us and one of those for me is swedish gingerbread-cookies.
You can buy them everywhere and there is shops who put boxes of gingerbread-cookies by the cash registers, so when you pay, you get that smell right up in your nose...and yes, it smells soooo good!
I try to put my nose in the other direction and not even look down in to the box...what I don´t see, dosen´t exist! That´s how I try to survive the cravings.
I don´t have any physical craving but in my mind, there will always be one.
Every Christmas has been a struggel before I started my life as 100% dedicated to Low Carb High Fat. Now it makes it easier but there is always situations wich is harder to deal with then others, off course.
The main rule is:
Don´t fool yourself to think that you CAN eat all that yummie stuff for a week and then stop!
The best comment I heard about that is: I started to eat Christmas-food and I haven´t stopped yet and now it is is july...
But that is so true: You think you can treat yourself a week between Christmas and New Year but when that week is passed, you can´t stop anyway.
I don´t even make substitutes for my cravings. Yes, there is recepies for example of gingerbread-cookies without starch, sugar and gluten but I CAN NOT BAKE THEM! Why?
Because it is a trigger for me!
So, make a list of your Christmastriggers and decide to not fool yourself and make substitutes, if you are not 100% sure of not continue eating the real stuff after.
The only treat I will make for Christmas is choclad truffles with different tastes, as vanilla or minth. I use 90% cocoa wich is the strongest cocoa-level you can make treats of.
100 grams of 90% chocolate, wich you melt on low heat
3/4 deciliters of full fat cream, wich you whip in to the melted choclate together with a tablespoon salted butter. You can use some kind of sweetening, like Stevia.
Add also some flavoring like minth, whiskey, vanillapowder or what you like or just as it is.
Put it in the fridge for an hour, take it out and role them to small balls and and role them in pure cocoapowder or coconutrasps.
I will also make a Christmascake and this I made for my sons birthday this summer:


8-10 pieces


Cake base:
150 g butter
150 g dark fine chocolate (70-85%)
3 eggs
2 cups sukrin (sweetner)
1 tsp vanilla powder
1 cup almond flour
Glaze
1 cup whipping cream
100 g dark chocolate (70-85%)

To do this:
Preheat oven to 200 degrees. Melt the butter in a saucepan. Grease a springform tin with melted butter.
Chop the chocolate finely and add the chocolate into the melted butter. Stir constantly and let the chocolate melt on low heat.
Beat eggs until fluffy with sukrin in a bowl.
Add the chocolate mixture into a springform (20-23 cm) and bake in the oven for 20-25 minutes.
Let the cake stand and cool, preferably in the fridge.
Pour the cream into a saucepan and break down the chocolate. Heat over very low heat. Stir constantly. Pull the pan when everything melted and let cool. The icing will become thick.
Remove the cake from the mold and spread the icing over the cake.

As you see I added cherrie-halfs on my cake but for christmas there might be other options like, coconut rasps, other berries or just as it is!

A small update!

I am soooo sorry for not writing here right now but a lot of things is happening right now. I just started an education as a chef, wich is really fun and interesting considdering my "obsession" of food! *ha ha*

I started a new fase in my diet also, because of my low change in loosing weight where I realised that I eat to much carbs even though I thought it was low and I call it ketosis-eating, wich means that I eat more fat, more proteins and almost no veggies at all and lost another 4 kilos in 1,5 month.
I will continue doing that until Christmas, first of all.
I really, really want to loose my last kilos of overweight!

Modern wheat a "perfect, chronic poison," doctor says



(CBS News) Modern wheat is a "perfect, chronic poison," according to Dr. William Davis, a cardiologist who has published a book all about the world's most popular grain.
Davis said that the wheat we eat these days isn't the wheat your grandma had: "It's an 18-inch tall plant created by genetic research in the '60s and '70s," he said on "CBS This Morning." "This thing has many new features nobody told you about, such as there's a new protein in this thing called gliadin. It's not gluten. I'm not addressing people with gluten sensitivities and celiac disease. I'm talking about everybody else because everybody else is susceptible to the gliadin protein that is an opiate. This thing binds into the opiate receptors in your brain and in most people stimulates appetite, such that we consume 440 more calories per day, 365 days per year."
Asked if the farming industry could change back to the grain it formerly produced, Davis said it could, but it would not be economically feasible because it yields less per acre. However, Davis said a movement has begun with people turning away from wheat - and dropping substantial weight.
"If three people lost eight pounds, big deal," he said. "But we're seeing hundreds of thousands of people losing 30, 80, 150 pounds. Diabetics become no longer diabetic; people with arthritis having dramatic relief. People losing leg swelling, acid reflux, irritable bowel syndrome, depression, and on and on every day."
To avoid these wheat-oriented products, Davis suggests eating "real food," such as avocados, olives, olive oil, meats, and vegetables. "(It's) the stuff that is least likely to have been changed by agribusiness," he said. "Certainly not grains. When I say grains, of course, over 90 percent of all grains we eat will be wheat, it's not barley... or flax. It's going to be wheat.
"It's really a wheat issue."
Some health resources, such as the Mayo Clinic, advocate a more balanced diet that does include wheat. But Davis said on "CTM" they're just offering a poor alternative.
"All that literature says is to replace something bad, white enriched products with something less bad, whole grains, and there's an apparent health benefit - 'Let's eat a whole bunch of less bad things.' So I take...unfiltered cigarettes and replace with Salem filtered cigarettes, you should smoke the Salems. That's the logic of nutrition, it's a deeply flawed logic. What if I take it to the next level, and we say, 'Let's eliminate all grains,' what happens then?
"That's when you see, not improvements in health, that's when you see transformations in health."
